Une adresse bien connue des amateurs de poissons et fruits de mer. On y découvre par exemple en antipasto, des moules à la pisane ou, pour jouer la carte de l'originalité, un tartare de figues sèches à l’espadon fumé. Côté pâtes, pas de carbonara au menu mais plutôt des pici à l’ail noir, à la burrata et aux anchois. Une cuisine traditionnelle et raffinée, avec un œil toujours attentif à la créativité, sans dénaturer les produits ultra frais. Et sans oublier la belle carte des vins !

Il personale è disponibile e cortese, gli ingredienti e il menù sono lavorati sapientemente, di gran scelta e l'intera esperienza del pasto è stata veramente eccezionale.

Beautiful food in an intimate setting. The ambience and relaxed pace of rural Tuscany is embodied in this gem, hidden in the side streets of of Central Pisa.

L'Hostaria le Repubbliche marinare è stata proprio una bella scoperta. Locale elegante e raffinato, piatti fatti con materie prime ricercate e accostamenti originali. La carta dei vini e la carta dei distillati meritano una lettura anche se non si è appassionati! Consigliatissimo.

An acquaintance recommended to pay them a visit when visiting Pisa and it did not disappoint.
Beppe welcomed us warmly and led us into the dining hall, a traditional Tuscan setting up that’s got its appeal. He helped us with recommendations and the food was delicious and flavoursome.
Our daughter loved the truffle and egg spaghetti. We enjoyed the fish of the day smoked sashimi and two typical pasta dishes. The spaghetti “on the board” (seafood in a rich tomato sauce) was to die for.
Paired it with a white Vermentino wine, which was crisp and mineral.
Desserts are also all home made and apt for any sweet tooth.
