Taku, le chef du restaurant Jin en impose. D'abord par sa stature puis par son génie culinaire. Ce géant de la cuisine japonaise a déjà quatre restaurants à Sapporo. Inutile de dire qu'à Paris, les autres japonnais l'attendent au tournant. Lui, sûr de son coup, n'a que 12 couverts et les clients peuvent surveiller en permanence l'avancée des plats derrière le comptoir de la cuisine. Trois menus au choix où les produits et les poissons sont d'une grande fraîcheur et d'une étonnante qualité avec des assaisonnements très précis. La soupe miso n'a rien du bouillon style eau de vaisselle améliorée servie ailleurs. Elle est parfumée à souhait. Le tartare de daurade, gingembre et œufs de saumon est lui aussi puissant. Les sushis sont assez remarquables et ceux à l'huître ou la crevette crue sortent de l'ordinaire. La table vient d'être récompensée d'une étoile au guide Michelin, et on ne peut qu'approuver. À essayer sans hésiter au déjeuner pour tout amoureux de cuisine japonaise !

A small high end sushi ya in the 1st district
The great thing here compared to other one star sushi ya is the service. Strangely, it’s also the negative point. Let me explain. But first let’s give the context and a general review. You’re in a very high end sushi place, the chef does the show and you’re amongst the only 7 persons in paris to enjoy it for this service! Very vip. The ingredients are only the best. The chef is super picky and will remove any defects. He has his secret recipe for the rice, but the sushi holds less than a minute so you have to hurry.
The difference with the other I already posted a review (Sushi B) is mainly the price (double) in exchange for more service (triple!). The waitresses are the perfect representatives of the high end Japanese restaurants. Note that the chef will be the reference for everything (in France for the wine it’s the sommelier for example). I have nothing but praises towards the waitresses that I had. They were extremely nice, diligent and professional. Strangely, I was a bit surprised by the chef second (the chef assistant) who was the most acclimated to the western civilization (he spoke perfect French for instance). I perceived a bit of a French condescending attitude in contrast with the others (also in contrast with other Étoilé where they are careful of not behaving like the stereotypical French waiter in a tourist trap). I perceived it on his answer to one question, where I realized that he had no/few experience of the other Japanese étoilé in Paris, compared to me. So do not pay attention, focus on the food, atmosphere and rely on the waitresses to feel the respect you deserve for the price you pay. Because they really do make you feel special.

Does deserve its star based on the quality of the ingredients and the craft of the chef.

Update 2022: went back 11 months later. We were 8 this time. Some changes in the dishes. But roughly the same at the end of the day. High end, expensive but with high quality and especially with a high staff/client ratio. The staff changed and grew a little bit. I saw at least two new members.
Bottom line, it still does deserve its star.
