Situé à Paris, Braise est un restaurant au décor élégant, où le chef Sylvain Courivaud mijote une cuisine au feu de bois.
Ce Braise, ouvert par Stéphane Manigold, bien connu dans le monde de la restauration, est planté en face de Contraste, une autre de ses tables. Pour cette adresse, il fait confiance à Sylvain Courivaud, passé notamment au Meurice. Ce jeune chef charentais fait ici feu de tout bois (nous ne pouvions résister) : cuissons au grill, au barbecue (big green egg, binchotan pour les connaisseurs) et à la flamme. Résultat : des viandes d'exception, des poissons et des légumes à l'étonnant goût fumé et/ou grillé. Belles quilles pour la soif et élégant décor.

Le cadre est sympa le personnel aussi. La carte n'est pas trop grande ce qui nous indique que les produits sont frais.
Je recommande ce restaurant nous avons adoré et il est inscrit au Gault & Millau ce qui est une valeur sûre.
Une cuisine savoureuse et originale, un service chaleureux et professionnel, une ambiance branchée et conviviale. Merci à Baptist pour cette belle soirée !
I have eaten in other Rostang restaurants and have always enjoyed myself but this one is an embarrassment. Not to mention the table beside us had complained about the food as well.
When we arrived there was one table, they welcomed us took our names and turned around for another server to “welcome us” take our name. I mentionned we had a bon Cadeau they said to tell your server, OK.
When the server came he said why didn’t you mention at the door for the bon Cadeau. He asked me to send him by email and he didn’t put the correct address so then they treated us like we weren’t able to pay for the restaurant which was very rude. Once he saw we had accord mets et vins he took the drink menu from us and said you don’t need this. If I would have know they would have served us MAYBE 4cl I would have gotten an aperitive. As well, I had looked around and everyone had atleast 3x the volume in their glass so I don’t understand why paying 50€ each for 4 glasses we would get less.
Then after the 2nd “plat” we had to ask for bread, as well my husband doesn’t eat fish so they had given him the accompaniment of the plat du jour which for me is not an effort more like cost savings and the 3rd plat was broccoli for him. We are for plant forward eating but not cold.
Now we are at the dessert and are waiting for our 4th“glass” of wine and they forgot! Without excusing themselves the “sommelier” made us gin and toniques!
1. My husband doesn’t drink white spirits and they didn’t ask us if we liked or wanted it. 2. It doesn’t pair with chocolate and made my stomach hurt after thank you.
We come to the end of our experience; the first server comes back and asks to email the bon Cadeau again, I comply and he says this is directions fault but his problem if he doesn’t receive the bon Cadeau all with this arms crossed I find him very ignorant and shouldn’t speak like this in front of clients. Then we receive the bill and he says “vous avez tout simplement 8€ à payer.” Actually we had paid 250€ for this so nothing is tout simplement merci.
I would not recommend Braise to anyone.
