First of all the 2 best dishes which were the tuna tartare and the burnt sea bass. Both had really good flavours with great balance and were very fresh, excellent cooking for both.
The 2 dishes that didn't quite do it for me were the smoked monkfish (croquette) and the poached and smoked squid. The smoked monkfish croquette I found to be very strong in the smokey flavour and lacked seasoning, the pea and mint sauce that it comes with is very light and delicate, so the strong smokey flavour of the monkfish overpowers it so you're left with a lingering smokiness in your mouth. I think if you tone down the level of smokiness in the fish, add more seasoning and serve it hot with the cold pea and mint soup, it would balance better. Because the croquette is served cold, that intensifies the smokey flavour. The poached and smoked squid, sorry to say I found it quite bland and wasn't sure what flavours I was supposed to pick up as any flavours were very subtle. Again a cold dish, which I think would be better served hot.
Not sure if we would have liked more dishes if we went for the tasting menu, but right now for the high end price you're paying, complexity and creativity of cooking that's being delivered, it's a shame this does not show on the end result of some of the dishes. I'm sure a lot of locals and tourists loved the dishes, but with a little rethink and small changes the dishes could be so much more.
