Please update Michelin from 2 to 3 $ signs. Please update chairs to wait 2 hours on confortable stool. Please put more wine in our glasses not 4 sips. Please if you serve cheese, provide bread. We had to wait 50 minutes between our 2 plates, if you want to really apology bring something... At the end we paid 85€ we are not full and not drunk. It's a concept issue not a cuisine issue for us.
The setting was soft and simple, lounge-like, sleek and elegant.
The staff knew exactly what their job was and it seemed like they were genuinely happy to do so. The chef handled multiple courses for several tables all alone and without ever beeing in a rush. The food was delicious, showed both balance and depth, and presented the fishes elegantly with minimal transformation. The ingredient pairings where sometimes classic sometimes very bold, but always felt obvious after tasting. The wine list showed great respect to the local producers with amazing bank for your buck ratios.
All in all, PiNKU serves a clear, intelligent and efficient cuisine, that shows deep affection to the local culture. But if the quality is very high and the execution flawless, be wary that you will be decieved by this calm restaurant where everything flows so naturally.
I find this to be a great direction in which to take modern cuisine.
