Non loin du palais Renaissance Medici-Riccardi, à mi-chemin entre la piazza San Lorenzo et la piazza San Marco, cette très jolie pizzeria ne vous laissera pas indifférent. Déjà par son ambiance conviviale et sa décoration intimiste. Puis, côté pizzas, les saveurs originales et les produits biologiques locaux font un tabac. Il y a d'ailleurs peu de tables, donc mieux vaut venir tôt ou réserver. Sachez que Simbiosi c'est aussi un joli café, au sol vitré et murs en pierre, ainsi qu'un restaurant de pasta bio pour les amateurs de délicieuses pâtes maison.

My wife & I decided to eat Pizza in this place because we saw them cooking it on fire.
We both ordered two different Pizzas, watching the cook preparing the pizzas & placed them in the Fired oven, then he goes to toilet and handed over the job to a young "Non Italian" lad, I'm not against immigrants but whom I knew is the janitor of the shop, ie cleaning toilets, wash dishes & cleaning the floor. This lad then pulled both Pizza of the over & started using his filthy hands to spread fresh tomatoes & cheese on the top of my Pizza & served it to me where my wife didn't need to be topped up , straight from the oven to the table.
Then He went to curry on washing the dishes.
This is the first time I have seen a Pizza made in this way, by spreading cold tomato & cheese after been in the Oven ????.
Also the Pizza bread was burned black,
So I complained to the Lady who was serving us, how come this guy uses his dirty hands , just seen him cleaning the toilet to be allowed to touch customers food?
She was shocked & could give me a good answer except, oh we cook it that way.
I refused to eat it & did not order alternative.
The problem with Florence, there are thousands pizza restaurants & it's not easy to find a decent place to eat.
So don't go to this place , try to find places outside the centre of Florence.
